Hotel Grand Pacific Banquet Chef Ian Goard and Apprentice Chef Richard Baker took home both the People’s Choice and the Most Artistic Creation awards at last week’s Colour Your Palate competition in Victoria, BC.
An annual event to raise funds for the local artsREACH programme, Colour Your Palate challenged twelve of Victoria’s finest chefs to use colour as an inspiration for an artistic and delicious canapé. Ian and Richard were given “orange” to work with and their cubist creation, a saffron orange pound cake filled with orange mousse, blood orange gelee and caramel sponge candy, was the popular favourite.
