We believe that the right pairing of food and wine is determined by each guest and their unique personal tastes. We are partnered with the Sommelier Guild of Canada in Victoria, which bases their certification program here at the hotel. We offer classic and unexpected choices from Vancouver Island, BC and abroad, including some less familiar – but exquisite wines from lesser known producers and regions.

We also offer single estate teas in English Tea Council-approved Bodum tea pots, an extensive mineral water program, berry and honey based wines and sake by the glass.

Entertainment
Born in Brantford Ontario, Jan Stirling studied classical piano from the age of six and continued with that and alto saxophone, throughout high school and University of Western Ontario, London. She calls her style "smooth jazz" and loves to share her beautiful music.

Her beautiful melodies have won her acclaim at home and abroad. We invite you to spend a relaxing evening with her in the Pacific Restaurant Saturday and Sunday evenings, 6:30 - 9:30 pm.
